As soon as the Flat bread is done move it to a cooling rack so the hot pan does not continue to cook it. Because Millet is a gluten free grain this will not be flexible enough to fold in half. Make open top sandwiches or cut into pieces and use like slices of bread. This is a very hearty whole grain food similar in texture to 100% whole Wheat or Spelt bread. The taste is milder though, more like brown rice. There is a slightly crunchy texture and nutty flavor.
