The 8 pint jars of home canned beef just out of the pressure canner, cooling on a wooden board. Allow them to sit over night. Check to make sure they have sealed just before putting them away by pressing down on the center of the lid. It should not move or make a noise if it is sealed. If you look carefully you should see that the center is concave or pulled in by the vacuum inside the jar. They no longer need the rings, so you can unscrew them. Gently wipe them off to remove a film of the meat juices which normally do escape into the processing water while canning.
