Pressure building!

Follow the directions for expressing steam before closing the tiny valve on a Pressure Canner with a gauge, or setting the weight in place, and bring the canner up to pressure. You begin to time the processing after the pressure is reached and it stays steady at or slightly above what is called for. If it falls below pressure, you will have to start timing over again to be safe. Here you can see the weight in place.
