Canning the First Batch

The aluminum Steam Canner on the right has been filled with sealed canning jars and now is 'up to steam' which you can see in the bottom right corner of this photo. I processed the jars for 20 minutes. I am not aware of approved USDA canning instructions for Maple Syrup. All I can say is we have never lost any of our Syrup, and routinely keep canned Maple Syrup for 7 years or more.
