I am just getting started in this photo. On the counter at the right is the first 2 pound London Broil Shoulder steak on a cutting board. It will be sliced across the grain, and cooked in the cast iron frying pan, then moved into the stainless steel covered kettle with a thick aluminum plate on the bottom to keep warm until we have about 8 pounds of meat ready to fill 8 pint jars. The jars are in the oven set at 215 degrees so they will be hot and ready to fill.
