The 'Back to Basics steam canner is on the left, shown with a flat 'plate' for pint jars on top of its wire rack. Pint jars are unsteady directly on the wire rack which came with that canner. It is the better canner, as it heated up a little more quickly, and needed to have more hot water added less often between batches than the other brand on the right. Both worked fine though. Hot packed jars of fruit were prepared just in time to refill each canner. By filling one and getting it up to steam, and then filling the other, one person could keep up with each canners 20 minute processing time for Applesauce.
