For this very small scale operation, I decided to use propane. A heat shield would not only block the wind, it would keep the hot gases from the burner close to the sides of the pan as well. Behind the propane burner is the heat shield I made out of aluminum roof flashing. It is very thin and cuts easily with tin snips. I secured the ends with real duct tape which should be quite heat resistant. If you have department store duct tape, it would be better to drill a few small holes and connect with pop rivets or small screws with nuts.
