Two more taps on the other side

Sap ran out before I was half way done drilling the 4th hole in this tree. That is a very good sign. We are putting a total of 11 taps in 3 trees this year. We chose the ones we knew had the sweetest and most abundant sap. Years ago we tapped as many as 40 trees for our own use. Home made Maple Syrup is a wonderful treat on pancakes and French toast. I like it served hot over vanilla ice cream and use it in cooking many different ways. One favorite is to glaze salmon or poultry with just a little Maple syrup.
