Beets are one of my favorite vegetables. Our Detroit Dark Red variety is easy to grow and very hardy. They grow quickly, and you can plant every few weeks from early Spring until late Summer. The young leaves can be picked to eat raw, and later steamed as early greens with or without tiny beet roots. Late root harvests will keep in a cellar or the crisper of a refrigerator for months. Unlike carrots, onions and parsnips, beet seed will germinate reliably after years in cool dry storage conditions.
