Skimming off boiling fruit

While the fruit and sugar are cooking, a foam will form on top. This should be skimmed off as shown in this picture. If you look carefully, you can see that the sides of the Maslin pan are tapered. The bottom is the size of a large range burner, 8 inches. The top is about 12 inches in diameter,giving much more surface area for evaporation and room when the contents boil up high.
