Mature head of Early Jersey Wakefield Cabbage

Our crop of early cabbage is ripening fast now. We are canning it pickled with vinegar and various other garden crops such as beets for flavor. It could be fermented into Sauerkraut, frozen to go in soups and of course stored in the fridge for Cole Slaw. Cabbage can be eaten and stored so many different ways.
