Just like my parents and grandparents I remove early sprouts from my potatoes a couple times in winter storage. Most but not all had one larger sprout. Removing them keeps the potatoes better in storage. Don't do this in the weeks before you can replant your potatoes in the spring when you want to see the sprouts as you cut each potato into pieces with one or two good sprouts for next years crop. It is best for the cut surfaces of the potatoes to dry a bit before planting.
