I plant beets here and there in my garden starting in the Spring and when ever there is a spot where something else was harvested. The tiny Beet greens are very tender and good and so are the half grown greens with or with out small roots attached. Later in the growing season the full sized roots are ready and they can be stored in a root cellar or refrigerator crisper, pickled or canned.
