My Amazing Spinach

We have had a dozy of a Winter. Temperatures as low as -7 with wind chill factors -20. Our snow fall has been fairly light except the big snow on January 26th. With this storm we got 2 feet of fluffy powdery snow. Now I come to my amazing spinach story. Late last Fall I sowed Bloomsdale Spinach seed in one of the raised beds of my greenhouse. The seed germinated well as expected.Unfortunately since I sowed the seed late in the Autumn it did not produce a crop. I fully expected the tiny spinach plants to freeze. I have a thermometer in my house that monitors the greenhouse temperature. At night the temperature is about the same as outside. When the sun is shining brightly the temperature is about 20 degrees warmer than the outside air.One day mid December I decided to go into my greenhouse and have a look at my poor withered spinach plants. To my astonishment the spinach was alive and well. I quickly got my watering can and watered them. Since then once a week or so, I water the plants thoroughly. I have had this greenhouse for a few years now and I am learning more and more. In my opinion the best way to learn is just try different methods. You see what works and what doesn't. I can't wait to start some lettuce in the greenhouse. My plan is to start head lettuce under grow lights in my house and transplant the tiny plants in one of the greenhouse raised beds. I have also found starting cucumbers and winter squash in the greenhouse and then transplanting in our vegetable garden gives then a great start. By using this method the plants are strong and have thick stems. This helps to minimize insect damage. I delight in experimenting with new ways to use my greenhouse.
