Filling jars with Relish

I have just filled a clean hot jar from the oven with relish, and am securing the lid firmly with a ring. An empty jar is seen just to the right, and behind it is another one with a jar funnel in it. In the center is the Maslin pan with the cooked relish. Notice the measuring cup hanging over the side of the pan. The newer style cups with an open bottom handle work nice like that. To the left, is the Steam Canner water tray and rack filled with scalding hot water. Some jars are already on it. Although the board under the newspaper does not show in the photo, it is there. Just a layer of newspaper would not protect the counter from the heat.
