Canning Apples 3
Here is a good days work. I figure this took a total of 7 hours. There was a long break midday as it simmered. This applesauce has red skins still in it. It took a bushel and a half, about 90 pounds of apples to make the 24 quarts of sauce I canned today. The jar with the white plastic lid wasn't full, so it will just be eaten up soon. Notice the jar lifter tongs on the left end of the cooling board. That is a good design for lifting the hot jars out of boiling water.
