This photograph was taken in late May, but beets can be planted in any convenient spot during the Spring and Summer. Small leaves are excellent raw in salads.You can thin small beets and eat the whole plant boiled or stir fried. Once good size bulb roots form, they can be harvested to boil as a sweet vegetable. They are fine right in the garden until cold weather nearly freezes the ground. Then they should all be pulled, and stored in a root cellar or canned.
